Litehouse Foods, Hawkins Family Donate Equipment to UI Human Performance Lab

April 25, 2003^MOSCOW – Students using the University of Idaho Human Performance Laboratory on the Moscow campus can thank Litehouse Foods and Doug and Edward Hawkins for new equipment recently installed in the lab. ^The lab, which is operated by the College of Education’s Department of Health, Physical Education, Recreation and Dance, provides UI undergraduate and graduate students the opportunity to measure how their bodies perform under varying conditions. The new equipment donated by the Hawkins family is valued at $50,000 and includes a metabolic measurement cart, electrocardiogram with oscilloscope, pulmonary function, and electromyogram.^“This gift will make a tremendous difference to UI students and to our ability to continue our leadership in human performance and biomechanics.” said Jeanne Christiansen, dean of the College of Education.^The Hawkins family began their success story in Hope, Idaho, with the Litehouse Restaurant. Edward Sr. developed his original bleu cheese dressing. Customers would come for dinner and bring containers to take home the dressing.^In 1963, the first jars were sold at a local grocery store. His sons, Doug and Edward Jr., knew they were on to something, and made the decision to quit their teaching jobs to dedicate full time to the fledgling dressing business. The company grew over the years and today is widely known for a wide variety of salad dressings, dips, sauces and marinades. Doug and Edward put emphasis not only on their quality products, but the high level of customer service as well. Litehouse is still a family-owned business, and is listed by Entrepreneur Magazine as one of the top 100 privately held companies in the United States. ^The Hawkins are long-time supporters of the University of Idaho, with many family members receiving their degrees. Edward and Doug Hawkins (and both of their sisters) are alumni of the College of Education, and Doug is a member of the College of Education Advisory Council. In 1995 Doug initiated the Eric Kirkland HPERD Scholarship Endowment. “Professor Kirkland endeared himself to students with his genuine interest in their lives and his strong Christian principals,” he said.
